You’re not getting health benefit unless you use Organic, otherwise you’re eating toxins.

It can work, but the ratio may be slightly different. Typically, gluten free is a 1:1 replacement to whole wheat. I would use that same ratio.

I read an article that encouraged using 2 to 2 1/2 tsp baking powder per cup of oat flour due to the lack of gluten.

I have just found I have a gluten issue. All the gluten free all purpose flours smell and taste horrible, and forget about the piece! I have been making meatloaf with steel oats and it’s great and have no issues. And always wondered why can’t I use steel oats for flour? You have answered my question and gave great information!!
