I’m a bit disappointed for the effort made. Maybe I need to add roasted mushrooms or other things for added interest/texture, but I think I just have other preferred mac n cheese recipes. Or maybe it’s just the trade-off that’s made with a “healthier” recipe like this that has the benefit of roasted butternut squash.

Don’t be discouraged about the amount of liquid left in the pot after cooking. It truly does thicken a lot as it sits. Next time I will add carrots/broccoli/brussels/cauliflower…whatever is on hand to compliment the creamy, buttery butternut. Thank you for sharing this recipe. It’s a keeper!

Hi! I’m sorry, I missed your message until now. I’ve frozen this mac and cheese in my large silicone ice cube tray, which offers easy portions perfect for my toddler. I’ve microwaved it on low power, stirring occasionally, until warmed through. It’s not as pretty after thawing, but it still tastes great!

I made this yesterday. It turned out really good, I added extra salt and garlic powder. I am planning on freezing a bunch to have through the fall/winter. I found it quite rich but plan to round it out by adding a serving of peas, or even broccoli, as a side. Definately easy to make, quick and not many dishes.
