Hi Susan! Welcome to my site, I’m glad you found it! That’s an good question. It would be a nice spicy pizza sauce, or it would be great baked with some goat cheese or mozzarella on top to serve as a dip with crusty bread. Hope you enjoyed the pickled onions!

Maybe a touch of sugar would “smoothen” the tomato acidity. Furthermore, next time I would consider to add some chicken stock for better “body”.
