Here in Morelia, at my favorite cafe, they make shrimp tacos with shredded cabbage and shredded carrots. And the tacos are just excellent! So I’ll try the black bean enchiladas–with brócoli. ‘Sounds yummy.

I’ve craving enchiladas and this recipe didn’t disappoint. I didn’t have the ambition or time to make the homemade enchilada sauce, and instead bought Trader Joe’s (new?) enchilada sauce which has a nice kick of heat. I wasn’t quite sure about the broccoli but sautéing it gave a nice smokey/roasted flavor. They were filling but didn’t leave me feeling overly stuffed. I used some plain yogurt as a sour cream substitute and am already looking forward to leftovers tomorrow night.
